Pumpkin Pie Protein Overnight Oats
You can enjoy the tastes of pumpkin pie and get extra protein from these tasty overnight oats. Great for a quick and healthy breakfast or snack on the go!
Ingredients:
- 1 cup rolled oats
- 1 cup unsweetened almond milk
- 1/2 cup pumpkin puree
- 2 tablespoons maple syrup
- 2 tablespoons vegan vanilla protein powder
Instructions:
In a mixing bowl, combine rolled oats, almond milk, pumpkin puree, maple syrup, and protein powder
Stir well until all ingredients are fully combined
Divide the mixture evenly into two jars or containers with lids
Seal the jars and refrigerate overnight or for at least 6 hours
Before serving, give the oats a good stir and add extra almond milk if desired for a creamier consistency
Top with pumpkin pie spice, chopped nuts, or additional maple syrup if desired
