Slow Cooker Chicken and Vegetable Stew



This slow cooker chicken and vegetable stew is hearty, comforting, and packed with nutritious ingredients. Perfect for a cozy weeknight dinner or to warm you up on a chilly day.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 cups chopped mixed vegetables carrots, potatoes, celery
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

In the slow cooker's bottom, put chicken breasts

On top of the chicken, put chopped vegetables, onion, and garlic

Add chicken broth and mix everything together

Put dried thyme, rosemary, salt, and pepper on top of the mix

Turn the heat to low and cook for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is done and the vegetables are soft

Using two forks, shred the chicken, then stir it into the vegetables

Enjoy while hot!
