Arugula Gnocchi Dumplings



These Arugula Gnocchi Dumplings are a playful twist on traditional gnocchi. The addition of arugula and ricotta cheese adds a fresh and creamy flavor to these dumplings. They are quick to make and perfect for a weeknight dinner.

Ingredients:

  • 1 cup of arugula leaves, finely chopped
  • 1 cup of potato gnocchi
  • 1/2 cup of ricotta cheese
  • 1/4 cup of grated Parmesan cheese
  • 1 egg, beaten
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of nutmeg
  • 1/4 cup of all-purpose flour
  • 2 tablespoons of butter
  • 2 cloves of garlic, minced
  • 1/4 cup of vegetable broth
  • Fresh basil leaves for garnish

Instructions:

Finely chop the arugula and put it in a bowl with the potato gnocchi, ricotta cheese, grated Parmesan cheese, beaten egg, salt, black pepper, and nutmeg

Mix everything together well

Add the all-purpose flour slowly while stirring the mixture

Keep doing this until a dough forms

Spread some flour on a surface and roll the dough into balls or dumplings

Put the butter in a big pan and melt it over medium-low heat

Put in the minced garlic and cook for one minute, until the garlic smells good

Do not rush when you add the dumplings to the pan

Cook for two to three minutes, or until the bottoms begin to brown

After you flip the dumplings, cook them for another two to three minutes, or until they are browned on all sides

Add the vegetable broth and put the lid on top of the pan

For about 5 minutes, or until they are soft and cooked all the way through, let the dumplings simmer

Add fresh basil leaves on top and serve hot
