Summer Zucchini Turkey Burgers



These Summer Zucchini Turkey Burgers are a tasty and light take on regular burgers. Grated zucchini keeps the turkey patties moist and gives them a taste of summer.

Ingredients:

  • 1 lb ground turkey
  • 1 medium zucchini, grated and squeezed to remove excess moisture
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped red onion
  • 1 clove garlic, minced
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 burger buns
  • Lettuce, tomato, and your choice of condiments for serving

Instructions:

In a large bowl, combine ground turkey, grated zucchini, breadcrumbs, Parmesan cheese, parsley, red onion, garlic, egg, salt, and black pepper

Mix until all ingredients are well combined

Divide the mixture into 4 equal portions and shape them into burger patties

Preheat a grill or stovetop grill pan over medium-high heat and lightly oil the grates

Place the turkey burger patties on the grill and cook for about 6-8 minutes per side or until they are cooked through and have nice grill marks

During the last few minutes of cooking, you can toast the burger buns on the grill until they are lightly browned

Assemble the burgers by placing lettuce and tomato on the bottom bun, followed by a turkey burger patty, and your choice of condiments

Top with the other half of the bun and serve hot
