Yellow Split Pea Dal
Ingredients:
- 1 cup yellow split peas, rinsed and drained
- 4 cups water
- 1 tbsp vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili powder
- 1 can 14 oz diced tomatoes
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions:
Put the split peas and water in a large pot
Once it starts to boil, lower the heat and let it cook, covered, for 30 minutes or until the peas are soft
Put vegetable oil in a different pan and heat it over medium-low heat
Put in the diced onion and cook for about 5 minutes, until it gets soft
To the pan, add the minced garlic and ginger
Cook for two more minutes
Add the chili powder, cumin, coriander, and turmeric
Mix well and cook for one minute
Make a sauce by adding diced tomatoes and their juices to a pan
Mix the tomatoes with the split peas and add them to the pot when they are soft
Add pepper and salt to taste
Simmer the dal for another 15 minutes, stirring it every now and then
Put cooked rice on the plate and top with the dal
Add fresh cilantro on top
